Graham Cracker Crust
1 1/2 cup crushed graham crackers
1/3 cup sugar
6 Tbs butter, melted
1/2 tsp cinnamon
Mix and press into a pie pan or individual cupcake liners. Back seven minutes at 375 degrees.
2 packages (8 oz. each) cream cheese, softened (can use neufachtel)
1/2 cup sugar
1/2 tsp vanilla
2 eggs
1 graham cracker pie crust either from the recipe above or store bought
Heat oven to 325°F.
Beat cream cheese, sugar, and vanilla with mixer until well blended. Add eggs. Beat just until blended.
Pour into crust.
Bake 40 min. or until center is almost set.
Bake cupcakes for 15 min.
Cool. Refrigerate 3 hours.
Add chocolate chips.
Add oreo cookies and use an oreo pie crust.
Create mini cheesecakes using cupcake tins and nilla wafers for the crust.
