Turkey, Brie, and Apricot Quesadillas

My friend Monica made this for a meeting. They were so delicious, I took the leftovers home and ate them again for dinner.

Ingredients
8 flour tortillas, taco size
5 ounces brie cheese, sliced
3/4 pound turkey breast, thinly sliced
1/2 cup apricot preserves
1 cup shredded Monterey Jack cheese

Directions
Lay out 4 tortillas and top each tortilla with cheese, turkey, and apricot preserves. Top with remaining tortillas. In a skillet, heat 1 to 2 tablespoons of vegetable oil over medium heat. When oil is hot, carefully fry both sides of quesadillas for 2 to 3 minutes or until golden brown.

Alternatively, you could fry the tortillas individually, build your quesadillas and then put them into the oven so they’re all ready at the same time.
